Pinot Noir represents nearly 95% of the grapes produced, supplemented by Chardonnay and Pinot Gris. The average age of the vines is important (nearly 55 years) which explains the complexity of all the vintages. The estate works in reasoned struggle with certain methods inspired by organic farming. The harvest is carried out manually and all the grapes are usually 100% destemmed. The fermentations are gentle, derived from indigenous yeasts by limiting extraction.
